How to Clean Leafy Greens Properly — Spinach, Kale, Lettuce

Short answer: Leafy greens are the hardest produce to clean well — dirt, residue, and bacteria hide in the folds and crevices of every leaf, and a single rinse rarely reaches all of it. Research backs up two things: plain running water with agitation beats a still soak, and a mild acid or alkaline solution (vinegar, baking soda) outperforms plain water by a wide margin. A 2026 peer-reviewed review found baking soda soaks cut pesticide residue by a median of 50.9% and vinegar by 54.2%, versus just 30.2% for a plain water rinse.

Why leafy greens are different

Smooth produce like apples or tomatoes has one continuous surface. Leafy greens don't — spinach, kale, and lettuce are made of folded, textured leaves with crevices that trap soil, grit, and residue a quick rinse can miss entirely. That's part of why leafy greens show up disproportionately in foodborne illness data: a 2022 CDC report attributed the majority of E. coli O157 illnesses to vegetable row crops (leafy greens chief among them) combined with beef — the highest of any food category tracked. The 2006 spinach E. coli outbreak alone sickened 199 people across 27 states, hospitalized 141, and caused 3 deaths.

None of this means leafy greens are unusually dangerous to eat — it means they're unusually easy to under-wash, because the parts that need cleaning are the hardest to see.

What actually gets greens clean

  • Running water beats standing water. The Academy of Nutrition and Dietetics recommends tossing loose or mesclun greens under running water in a colander rather than letting them sit in a bowl — movement and fresh water dislodge trapped soil that a still soak leaves behind.
  • Separate the leaves. Whole heads of lettuce or cabbage should have their outer leaves removed and discarded, then the inner leaves washed individually under running water — folded, bunched greens hide the most residue in the parts that never touch running water if left intact.
  • A mild acid or alkaline soak does more than water alone. The 2026 review cited above found baking soda and vinegar soaks both outperformed plain water rinses and soaks by 15–20 percentage points for pesticide residue reduction. Separate lab studies on vinegar specifically found it can reduce E. coli on lettuce by several orders of magnitude within a minute of contact with agitation, though effectiveness against some pathogens (like Salmonella at low contamination levels) was inconsistent across studies.
  • Dry thoroughly, and wash right before eating. Food safety guidance is consistent on this: washing greens before storing them, rather than right before use, leaves them wet in the fridge — which accelerates spoilage and can encourage bacterial growth rather than prevent it.

Where this leaves you

The research points the same direction it did for other produce: agitation and a mild acid/alkaline chemistry both outperform a plain water rinse, and that's exactly what a food-grade soak tablet is built to combine.
